When booking, remember these are not a normal restaurants, don't ask what you want at date and time. Ask What they have available for your type of meal, around the date you planned and see what they have for you at their time. Do not follow the menus and options on the Web site, since they might not be offered at all specially during the holidays.
If and when you are lucky to get a booking, confirm it quickly and print out two copies of the booking and confirmation. Remember to bring these copies with you at your appointed date and time. Treat it like an airline check-in, come with plenty of time to spare for security, water and expect some aggravations.
If you can afford it, do not come to the Hotel on a Dubai taxi which will drop you off at security gate, but try to arrange and use the Hotel transportation service which will make it a lot easier to get in. Make sure you give a copy of the reservation and confirmation to the security guard or assistant, and wait for clearance. This is the time the time water comes handy, since they will make you wait in the sun for security clearance, and it gets pretty hot most of the time.
